I got such great recipes when I blogged about our zucchini, we have been eating zucchini for dinner every night! Good thing, because we are growing zucchini almost the size of Oscar!
I thought the recipes were so good, I put them on a project page. Now you don't have to leave your zucchini sitting on your neighbor's porch at night.
I always wanted to leave a comment but thought you had to have a blogger account...I've been a faithful reader for a long time!

ReplyDeleteSo glad you like Zucchini. I grew up eating the Zucchini pancakes and I love them! I recently found out about the Zucchini and Mozzerealla through a coworker. So I was happy you liked it too. It's good if you add Bisquick to it. So yum also!

ReplyDeleteEven after all these recipes, you may tire of z-squash. Feel free to play a fun game my brother and I invented as kids, zucchini baseball. Get some people together, set up bases, a few overgrown squash and a dozen tomatoes and let the fun begin!
hey-- thought you might want to know that i'm pretty sure you are supposed to cut zucchini when it is quite a bit smaller than that...like around 8" or so. it is more flavorful that way. and easier to finish it off!

ReplyDeleteIt's one cup yogurt (greek style!), one small grated or minced garlic clove, zest of one lemon and a pinch or two of salt.
Yum!
I had this "pasta" dish at a pig roast, but the noodles were made of mandolined yellow zucchini....mmmm...so good!
