For anyone else that may have more cucumbers than they know what to do with... here is a tasty dip recipe from Aprille.

Take: 6-8 oz of feta cheese, 1/2 cucumber, peeled and chopped, 1-2 tbsp. sour cream, and 1/4 cup green onion... stir it all together and that's it!

Any other good ideas for spare cukes?

  1. Thinly slice, place in bowl. Thinly slice some shallots and throw in bowl too. Sprinkle with rice wine vinegar, coarse salt, fresh cracked pepper and a little sugar. We had some of that with dinner tonight, yum.

  2. Why not try a cucumber face mask? Have a cucumber evening, get the girls round, have cucumber sandwiches and make these easy masks:

    Peel a cucumber, put it in a food processor (a blender will do) pour the cucumber into a colander or sieve so that you can get the juice and leave the pulp and seeds behind. Add half a teaspoon of lemon juice, and a teaspoon of witch hazel. Add to one egg white, which you have beaten until it is all fluffy. Ready to use! Pat it on, leave for between 15 and 25 minutes, and rinse off with warm water. While you are letting it do its job, cucumber slices are great for your eyes. Enjoy! Naomi :-)

  4. I like to slice them up and put them in a bowl of liquid from a jar of store-bought pickles. The flavor is just right and the fresh cucumbers taste sooo much better than the pickles from the jar!

  6. Have you ever tried the creamy cukes?
    Basically - and by memory - you thinly slice the cukes and then "wilt" them (directions for this can be found at www.americastestkitchen.com). After the cukes are wilted, add a little thinly sliced onion and make the dressing (based on 8 cukes):
    1 Cup Miracle Whip (or Mayo)
    1 Cup Sour Creme
    1/4 Cup White Vinegar
    Salt & Pepper to taste

    **You can use "light" versions of miracle whip & sour creme and still get a very yummy dressing**

  7. Have a spa day!
    Add thinly sliced cucumbers to your water...then sit back and relax with some slices on your eyes.

    Peel them and feed 'em to your bunny! My bunny loves cucumbers - especially the middle where the seeds are.

  8. Cucumber Sandwiches: spread cream cheese on your favorite bread then add sliced cucumbers. You can also add some sliced turkey to make it more hearty. It's refreshing and delicious.

  9. I like to make Greek Tzatziki with my copious cukes. Grate a cucumber and squeeze out as much liquid as possible. Mix it into a small container (about 8oz) of thick yogurt, preferably Fage Total Yogurt. Add garlic, lemon juice, fresh dill and salt & pepper to taste. Some people add olive oil too, but I usually don't. Serve with sliced good bread, or pita. Yum!

  10. No recipes really, but when I went to a spa they gave us ice water with orange and cucumber slices floating in it -- it was actually quite refreshing!

  11. Cucumber martinis! Sounds strange but they are REALLY yummy. A friend made them. I don't remember the recipe but I know it included cucumber juice, ginger, and gin. YUMMM. Also made it with vodka but the gin version was better.
